Gluten Free Pancakes!
Seeing how last Tuesday was Pancake Day (aka Shrove Tuesday), I figured I'd share my secret to awesome pancakes! I use the Kinnikinnick Pancake and Crepe mix. It's great - you add 1/4 cup oil, 1 egg (you can probably use an egg substitute) and 3/4 water, milk or any combination of the two. I usually use 1/4 milk and 1/2 water - it makes the pancakes a little more substantial- however, more water will make them a little lighter :) This batter is very sturdy and I added chocolate chips and blueberries, and the pancakes cooked perfectly. Add some real maple syrup (from Costco) and you've got yourself a yummy breakfast, supper, snack etc. Also, you can freeze the leftovers so you have your own home made frozen pancakes to pop in the toaster whenever you want! MMMM nothing like fresh pancakes!
