Happy Planet Thai Coconut Soup Review

A couple of weeks ago I was browsing Costco and came across this Happy Planet Thai Coconut Soup in the fresh cooler section. It is completely organic, gluten free and has no preservatives! It comes in two pouches (with an ample expiry date) and is refrigerated.

While I'm always up to try new products, I've had some pretty horrible soups among other things - but for $7 I figured it couldn't hurt. I was actually happily surprised at both the taste and texture. The soup wasn't too runny which is always nice, and had chunks of corn, bamboo shoots, and LOTS of flavour. It had a good amount of heat to it - not so spicy you can't eat it - but spicy enough so I would classify it as spicy :)

You could easily add some noodles, chicken or anything else you had on hand to beef it up - but I thought it was perfectly fine by itself. You can easily get 2 large bowls out of one pouch, but I had 3 smaller portions with a sandwich.

This company makes lots of other fresh soups as well - but this is the first time I've seen any of their products around. Let's hope they continue!

If you are looking for a quick lunch or supper - this soup is a definite keeper!
