Ahh Soup - nothing better than some warm soup for lunch - especially during the cooler months. One of my favourite soups is home made vegetable soup. This can have as many varieties as you like and you can make any size batch!
The basic ingredients are olive oil, onion, garlic, celery, carrots, canned tomatoes, gluten free stock (or cubes) and canned beans.
First dice the onion, garlic, celery and carrots to similar sizes. Then sauté in the olive oil until cooked (about 3 - 4 minutes).
Next add the canned tomatoes and stock (I usually use a 960 mL chicken or vegetable) and simmer for 30 minutes - or until the carrots are cooked to your liking.
Then add the beans (or other ingredients such as rice, quinoa, or pasta) and simmer for another 10-15 minutes. If you are adding rice, quinoa or pasta you may want to cook it first or add more liquid as they will absorb the liquid as they cook.
Season to your liking - I like spicy soup so I usually add a little hot sauce!
