I've been meaning to post this recipe forever - I found it in Alicia Silverstone's book called the Kind Diet - it focuses on vegan recipes - so this recipe is also vegan :)
It is quite easy to make, and it only needed a substitute of GF Graham crumbs for regular Graham crumbs.
You will need:
1/2 cup Earth Balance Butter
3/4 cup crunch peanut butter (mine wasn't crunchy because I didn't have any at the time)
3/4 cup of gluten free graham crumbs (I used Kinnikinnick)
1/4 cup maple sugar
1 cup chocolate chips (I used Enjoy Life) - if you want it vegan, make sure to use a vegan chocolate chip
1/4 cup soy, rice or nut milk (I used Almond milk)
1/4 chopped pecans, almonds or peanuts (I used almonds just because I already had some)
Step 1: Line a muffin pan with 12 cupcake lines
Step 2: Melt the butter in a small pan over medium heat, stir in the peanut butter, graham crumbs, and maple syrup - mix well. Remove from heat and distribute over your 12 cups (about 2 tablespoons per cup)
Step 3: Combine chocolate chips and milk in a different pan, melt the chocolate chips and pour mixture over each peanut butter mixture.
Step 4: Top with chopped nuts and place in the refrigerator for at least 2 hours.
It really is easy, and OH SO YUMMY! I shared with my friends at work and they all loved them. The kids thought they tasted like Reese Peanut Butter cups :)
