Today was a holiday so I rummaged through the cupboard to see what I could find to make. The result: an angel food cake, some frozen strawberries, and ice cream = gluten free strawberry shortcake :)
I had a box of angel food cake mix from Kinnikinnick which is super easy to prepare - especially if you have a mixer! Sift the mixture into a bowl, preheat the oven to 375 degrees and butter/grease a tube or bundt pan.
Back to the recipe - whip the egg whites into soft peaks, add 2 tsp of vanilla, and whip into firm peaks. I think this took about 8-10 minutes on 3-4 speed of the kitchen aid.
Fold in the mixture slowly, pour in pan, and bake for 30-35 minutes. I've made this before and they are typically easy to work with.
Invert the pan on a rack to cool and then add your toppings.
I had some frozen strawberries I mixed with a little cane sugar to make a strawberry topping and added some ice cream, but you could do blueberry, raspberry, etc.
