Gluten Free Strawberry "shortcake" Desert
I had a box of angel food cake mix from Kinnikinnick which is super easy to prepare - especially if you have a mixer! Sift the mixture into a bowl, preheat the oven to 375 degrees and butter/grease a tube or bundt pan.
You will need 12 egg whites - if you plan ahead (like I have done in the past, the little box of egg whites do just fine), if you are like me on a holiday with limited stores being open, you will have to separate the 12 eggs.....oh and then find something to do with the 12 egg yolks....
Back to the recipe - whip the egg whites into soft peaks, add 2 tsp of vanilla, and whip into firm peaks. I think this took about 8-10 minutes on 3-4 speed of the kitchen aid.
Fold in the mixture slowly, pour in pan, and bake for 30-35 minutes. I've made this before and they are typically easy to work with.
Invert the pan on a rack to cool and then add your toppings.
I had some frozen strawberries I mixed with a little cane sugar to make a strawberry topping and added some ice cream, but you could do blueberry, raspberry, etc.
