Quinoa is a great gluten free grain that packs a good protein and fibre punch. It does take a little bit of getting used to the texture and look, however, it can make great side dishes.
One of my favorites is a quinoa salad. One of my co-workers gave me the recipe, which I think she tried from the Quinoa 365 book. This salad is so adaptable, you can put anything in it you like.
You will need:
1/4 cup red onion
1/2 cup grape tomatoes
1 green onion sprig
1 tablespoon of fresh parsley
2 tablespoons of olive oil
1 tablespoon of lemon juice
1/2 cup uncooked quinoa
1 cup of water or broth
salt and pepper to taste
1. Rinse 1/2 cup of quinoa and cook with 1 cup of water or broth for 15 minutes. Then let cool. I usually use broth as it takes away from the strong quinoa flavour.
2. Chop all your veggies and mix with the lemon juice and olive oil.
3. Add cooled quinoa to your mixture and you're done!
This is a great snack to keep in the fridge and it will last 4-5 days easily.
Also - experiment with different veggies you have on hand, or add some spicy ingredients if you like it hot!
