Almond Flour Pancakes

Now that I'm making my own "milk" from almonds, I have lots of almond flour kicking around :) Last week I made almond flour pancakes. These were super simple and really yummy! I usually just make a few large ones and cut them in half as opposed to making a bunch of smaller ones - but it's totally your choice!

The resulting pancakes are light and fluffy and have a slight nutty taste from the almond flour.

Also, for convenience, I used the food processor to blend everything together and it makes for easy pouring into the pan!


1.5 cups of almond flour
3 eggs (or "flax egg")
1 cup milk (I used almond milk)
Optional: fruit of choice (I used blueberries) 

Mix almond flour, eggs and milk together until well blended. Add fruit.

Cook 1-2 minutes per side depending on your pancake size.

I freeze these and they work out wonderful!
